12 lb Pale Ale Malt
3 lb Bonlander Munich Malt
2.0 lb White Wheat Malt
1.5 lb Crystal 75
8 oz 2-Row Caramel Malt 120L
8 oz Belgian Aromatic
8 oz Honey Malt
8 oz Special B - Caramel malt
4.0 oz Pale Chocolate Malt
2 oz East Kent Goldings (5.0%) - added during boil, boiled 90 min
0.5 tsp Wyeast Nutrient - added during boil, boiled 20 min
1.0 ea Whirlfloc Tablets (Irish moss) - added during boil, boiled 20 min
90.0 ea Oxygen - added dry to primary fermenter
2.0 ea White Labs WLP028 Edinburgh Ale

Dough-In - Liquor: 6.48 gal; Strike: 167.66 °F; Target: 150 °F
Sacch rest - Rest: 90.0 min; Final: 149.4 °F
Sparge - Sparge Volume: 10.37 gal; Sparge Temperature: 170 °F; Runoff: 8.56 gal

2L, 1.040 starter - Stir Plate for 24 hrs before pitching
