FYI -- Here's a link to an interesting aeration/oxygenation experiment I was discussing with some folks today (Aaron & Randy, maybe?) at the Benz Beer Fest. This is one of the only times I've seen a homebrewer actually use a DO meter to check the effectiveness of wort aeration techniques. It surprised me that simply flooding the headspace of a fermenter with O2 for 5 seconds and then stirring vigorously could provide the recommended level of oxygen.
