Jalapeno Rasberry beer

Post by carrisr »

Since my Jalapeno/Raasberry beer seemed to go over well at Benz I was thinking about brewing it again or something similar for the IA Fest of Beers. I just got my score sheets back from Thirsty so I'm thinking about how to improve it. Many of you tasted it at Benz or at the meeting I brought it to so I could sue some constructive feedback. I have a couple of bottles left if anyone wants to refresh their memory.

The general consensus from the score sheets were that it is a very interesting beer, but out of balance. They felt the pepper flavor was a bit strong and the fruit flavor didn't complement the beer as well as it could. A few suggested may a different style of beer would work better (I did a Blonde Ale). This resonates some with my own opinion on the beer.

But where to go next? If I change the base style to match the fruit/pepper combo better, what do yo think might be a better match? I'm using a packaged sauce for this recipe so I can only vary the amount I use, not the ratio of fruit to pepper flavor.

Jalepeno/Raspberry Ale

Post by CMLarrison »

Randy,

I was thinking of brewing something like this. BYO magazine had a receipe for a Extract Jalepeno/Raspberry Pale Ale i do believe. Basically what it was and American Pale with 6 Halfed Jalepeno's and 1.5 cups of Raspberry's thrown into secondary if my memory serves me correctly. Any pointers or suggestions before i head down the Jalepeno/Raspberry road? Did you All Grain brew or Extract brew yours?

Jalapeno Rasberry beer

Clint,
Mine was just thrown together. I had brewed an extract blonde ale for a demostration and decided last minute to try and jazz it up. I had a bottle of this really good jalapeno/berry dipping sauce and I decided to just dump the whole thing into the secondary fermenter.

If I do it again I'll probably do it all grain, and either cut back the amount of sauce I use or maybe try it with a different base beer. Doing a pale ale might not be too bad, but I'm not sure how a lot of hop flavor and aroma will go with the pepper.
