I placed on order on Thursday, it went out Friday and finally arrived on Tuesday and were immediately placed in the fridge. It included 3 packages of high gravity trappist yeast smack packs. I am brewing this AM and activated them last night. Only one of the packs has "risen" slightly and the other two appear to be about the same size prior to activation. They came inside a pouch wrapped together with an ice pack in the middle. The pack was warm. Guessing I lost at least 2 of the yeasts - any ideas what could replace it quickly on locally. I don't think the BIY guy had smack packs and I didn't see an equivalent yeast strain we could use.

The 3787 never swells a great deal, but will take off in a starter. 24 to 36 hours is enough to get the starter going. With three packs in one 3 liter starter you could pitch at high kraeusen and likely have plenty of cells. If the date(s) on the smack packs are not to old I think your yeast will still be viable. Even if you have to put off your brew for a day, waiting to see if the starter takes off can save the cost of a batch of wasted wort.
