what are the best books for defining AND designing specific beer styles? i'm finding that my general brewing books are sorely lacking in these areas.

Brewing Classic Styles. Give both great descriptions of BJCP styles but also has recipes for each. You can use them as a basis for experimentation.

I agree. Palmer's "How to Brew" is complete but Palmer gets into "engineer mode" and makes a simple explanation as difficult to follow as possible. Go with "Designing Great Beers".

I second Randy's recommendation of Brewing Classic Styles. I've been mostly brewing directly from that book for the past year and it has never let me down. Additionally, the style-specific insights given by the authors are very helpful when thinking through recipe tweaks and process flow.

This is getting repetitious, but I'll have to agree with Randy too. I've used Brewing Classic Styles as the starting point of several of my beers. It is good for the extract and all grain brewer equally.
