Shift Clone

Post by DrPaulsen »

I'm gearing up to make a series of lagers -- a dunkel (for the club comp), a helles (for the hell of it), and a hoppy lager in the vein of New Belgium's Shift. Below is my first guess at a recipe for the Shift clone.

Any suggestions?

Notes
An attempted clone of Shift from New Belgium. The name is a tribute to Admiral Horatio Nelson, due to the heavily featured Nelson Sauvin hops in the recipe.

Whirlpool hot for 5 mins, then chill down below 160F and add "post-boil hops" to preserve hop oils. Whirlpool for another 15 mins, finish chilling and run off to fermentor. Make a 2L starter from the wort for 12-18 hrs, while the main batch is cooling. Dump trub before pitching, ferment at 50F, and take care to scoop off the krausen before it collpases to minimize harsh bitterness.

The recipe is based off the ingredients list from New Belgium's website, along with my CAP recipe and two APA recipes (Jamil and Gordon Strong).

ABV - 5.0
IBU - 29
Calories - 134
Hops - Target, Nelson Sauvin, Liberty, Cascade
Malts - Pale, Munich, C-80
Body - Medium-Light
Aroma - Delicate interplay between the subtle flavors of American hops and Specialty malts- the hops bring fruity (nelson), citrus (cascade) and floral/herbal (liberty) aromas. While the specialty malts exhibit toasted bread and a touch of sweet honey.
Mouthfeel - Crisp and clean- just like you would expect from a great Lager. That finish just begs you to take another sip.
Visual - Deep dark straw with copper highlights in this crystal clear brew
