I am thinking of making a blue berry lime soda for the festival.
Recipe (making this up as I go)
Syrup
24 cups of blueberries
12 cups h2o
42 oz sugar
18 tsp of lime juice
Mix at a ratio of 2 oz syrup to 8 oz of water.
Keg and carbonate.
I can calculate approximate pH drop from CO2, but what is appropriate pH for soda? Does it matter?

I don't know "appropriate" pH. Last year I made a ginger ale, and at first it tasted too sweet and kind of bland, so I added some lime juice. (I think, maybe it was lemon.) So basically, I'd let taste be your guide.
One thing I've learned about sodas is that they can use a lot more carbonation than beer. IIRC I carb at around 25-30 psi. W/ soda, the head dies down almost instantaneously so so worries about line balancing and all that fun stuff.

Soda pH can vary a lot, but it's generally in the 2.5-3.5 range. Coke is generally considered the most acidic, at 2.5. Mountain Dew is around 3.3.
