Bacon Beer

Post by Matt F »

Couldn't recall where the post was where someone was making a bacon beer, but Northern Brewer just released a kit that uses 30mL of bacon extract in a 5 gallon batch along with 12oz. of Briess cherrywood smoked malt. I had no idea bacon extract existed.

You beat me to the punch. I saw this too and was going to post to see if anyone was going to be adventurous enough to try it. I would, but I just ordered 2 kits, so I'm set for a while. If it's decent, someone should bring it to Benz Fest and our Festival.

Bacon Beer

Post by whitedj »

I started down this path awhile ago.  I tried the bacon maple from Rogue's Voodoo Dougnuts line of beer... was not that great, and ultimately lost interest.   I still have some bacon vodka, which I made thinking that would be the best way to get that salty smokey meaty flavor into the beer.

I currently have a mason jar with vodka and bacon grease with the end goal of having bacon extract for beer, cupcakes, etc in mind!

Yeah, I tried to do a bacon beer many years ago. Not good luck. My bacon infused vodka actually started out as that bacon-flavored vodka, but all it tasted was smokey, no "meat" character to it at all. So, I fried up some real stuff, cut off most of the fat, dumped it into the bacon vodka and let is steep for a couple of weeks. Then, stuck it in the freezer to get the grease to coagulate on the top. Siphoned off the vodka through the fat cap, and like you said - Bleh!! Gave up at that point on the beer and just used the vodka in bloody marys.
