Just in the nick of time to claim one batch per month for 2014....
Cincinnati Pale Ale - all DME/LME + US Northern and Cascade hops.
I am a little concerned of the OG at 1.052, but I am going to go with it. It will probably be a little sweeter than most, but should be quite drinkable. I usually do partial mash and have not done an all extract batch for over 15 years and wanted to try it again.

Nice! I love pale ales with cascade hops. I'm doing a kolsch right now and just started the diacetyl rest on my German Pilsner lager last night.

Daryl, if it's too sweet after the fermentation is done, you can always dry hop it in secondary to up the bitterness and add hoppy aromas.

I increased the malt by 20% to get closer to 6 gallons and that linear extrapolation may not have been correct.
The blowout of this batch smells really good both malty and hoppy.
I was shooting for an OG of 1.045, but the 7.5 gallon pail would have not been large enough to continue to add water beyond 6 gallons, and not have a mess during fermentation.
I thought there would be enough clearance to contain the kraeusen and use an airlock, but I had to convert to a blowout tube this morning.
It's all good. What doesn't go to creation of alcohol will give this batch some body, maybe even a creamy head.
Thanks for the tip - I'll keep that in mind and dry-hop/rack this batch to balance it out.

Another trick I've used is to pitch Nottingham to drop the fg... But that was a barley wine.
The guy who submitted a barley wine in the Furious competition...

The San Diego Super Yeast is nice too. I like a Pale ale around .052-.054. Can handle some more hops. Sounds nice.

And now it is bottled.
If it carbonates well in the next three weeks, I will bring some for critique at the May meeting.
It has a nice beer flavor. Nothing fancy, but should go down well in the summer months.
Pretty good for an all extract recipe.
