I currently have some wild hops growing in the garden. They are on their 2nd year after being transplanted from the wild and have really taken off, Already up to 14'. Last year the hop cones were plentiful but I did not harvest them. I did rub a bunch in my hands and they gave off a pleasant Cascade smell and a hop tea didn't have any weird funk to it. So this year I anticipate the crop to be very good so I would like to try to use them as bittering hops. How should I approach the amounts to be used in my recipes? IBU?
