Brewing Saturday 4/9/16
I plan to brew a DIPA on Saturday. Haven't made a recipe yet as I need to check my hop supply. I recall having lots of Columbus, Apollo and Mosaic so probably those primarily. Other than that, lots of 2-row, maybe some carapils, little bit of carastan and sugar.

I updated the original post. Wife will be home so I do not have to run kids to and from a birthday party. Going to start earlier at 8 am so can be done by 3 pm (should be sooner) for family stuff that night. After looking through my inventory of hops and grains sitting around It looks like grain bill will be 2-row, honey malt, golden naked oats, carapils & carafoam, sugar. Hops will be a little Chinook, then lots of Centennial, Simcoe, Apollo. WLP001 for yeast. Going to be about 10 gallons so a boat load of hops in this one.

OG today was 1.079 and did not add the 1.5 lbs. of sugar yet. Was shooting for 1.074. It is time to accept that I should not be using 75% efficiency to make recipes. Beer smells good. It should be a decently hoppy DIPA.

It was 1069 before the boil, right? What was the volume to the fermenter?

Yeah, was 1.067 or 1.069 pre-boil. Just shy off 11 gallons in carboys but one of them has a huge pile of hops in it. Probably 9 gallons after racking and dry-hopping.

With a 10 gallonish batch of DIPA you have a ton of hops. Lots of people bag, use a hop spider, etc. I just toss in pellet hops with reckless abandon. With well over a pound of hops in the boil kettle, mostly in the whirlpool, you are going to have a big pile of hops to mess with by just tossing them in like I do. In the picture below you can see one carboy on the left is a nice clean carboy. The one on the right has a bunch of hop debris in suspension. It was about a 3" pile on the bottom before fermentation kicked in. The picture was taken the next morning after brew day. I plan to tap both at the same time and see if I can taste any difference between them. Also curious of clarity difference and some other stuff.
Other picture is what I dumped out of the bottom of the kettle after filling the carboys. Not all of it, but most. After sitting for a while, the hops settled to the bottom and the clear wort rests on top. The clear wort is about a pint total. I just dump this because I don't want to mess up a batch by trying to save every last drop. A lot of homebrewers I talk to waist a lot of time and resources trying to get every last drop. I would suggest letting it go. I like to think those last few drops are the worst ones, and not worth tainting an entire batch to save a pint.
The other option I have seen is using a sanitized vessel, dump the bottom of the kettle in it. Once everything settles, you can decant off the clean wort to the fermenter. Like I previously mentioned, something I do not do but to each their own.
