Great time at the annual picnic. Hats off to Marilyn and Daryl for hosting - another fabulous time! Serious BBQ this year and hat's off to Fred for the great Korean ribs - tasty!

Fun time. Wife thought you guys were mostly normal and not as crazy as she thought!
For the Korean ribs recipe, since I was asked, this is pretty much exactly (close enough) the procedure for making the marinade:
http://www.maangchi.com/recipe/la-galbi
I did substitute some of my wine (the mix of Dragon's blood and Skeeter Pee) and I used a little less sesame oil than that recipe shows, because I literally ran out.
If you add sesame seeds, make sure they are toasted ones, or you can quickly toast them yourself. Put on a frying pan dry until they start to pop.
If you can, letting it marinate over night makes a big flavor difference. If the pans become "too dry" add only soy sauce, and very little at a time.
For the sauce (ssamjang), you have to mix in both the green jar Korean "miso" paste and the red jar hot pepper paste. By jar, I mean they usually come in plastic boxes that are actually engineered to let a little O2 in at the same rate the traditional clay pots do. Korean "miso" is roasted darker than Japanese, however you can still make a fabulous Miso soup out if it, it'll just be a little darker.

Thanks for the recipe and tips, Fred. I like to make Kalbi at home, but have only used the pre-mixed marinade. It's pretty good.

Fred Spinner - with Korean Ribs.
Shane and I tied for first losers (i.e. 2nd Place).
All of the ribs were good, except one....which did not receive any votes...and maybe for good reason. They should have been names Uncle Dan's Prison Ribs....his Prison Wine would have been a great(?) complement to that entree.
(Basically McRibs with sauce - but I tried them)!!!

We all tried them, just because!
Prison wine would have been the perfect accompaniment.

You can buy that at Chong's market in Iowa city for a bit less if you are ever down there. It's basically the same stuff canned. It's about 1/3 of that price to make it from scratch. A half gallon jug ofKorean soy sauce is about $5.tony b wrote:Thanks for the recipe and tips, Fred. I like to make Kalbi at home, but have only used the pre-mixed marinade. It's pretty good.

I will check out Chong's, as I'm down there periodically.
The hard to find ingredient for me is the Asian pears. Used to be able to get them at JoJo's, but not anymore.

Re: Beer Nuts Family Picnic 2016
I bought the Asian Pear from HyVee in Marion. They are small and very expensive for what they are by comparison to what JoJo used to have and that Chong's, the Chinese Market across the street from Chongs, and the little market on Gilbert Street has, but they work. Also the shelf said "Asian Pear" but the Pear said "apple pear". By very expensive? $1.50 each.tony b wrote:I will check out Chong's, as I'm down there periodically.

Other fruits that work well are Bosc (but not Bartlett) Pears, and probably even better than Korean Pears, very ripe Kiwi (2 or three). This was suggested to me from several native Koreans who have just as hard as a time getting Asian/Korean Pears as we do.
I'm sad about JoJo also. It is impossible to get any good Korean and Japanese supplies now in Cedar Rapids. He at least had the very very bare essentials. I justify my Costco membership on rice and laver (toasted seaweed) and make the trip 2-3 times a year there and to the two Korean Markets in IC. I stock up as much as I can. I'm behind on doing so. I typically make a batch or two of Kimchi when I do this, also.
