Trying new things, EXBEERimenting!

Post by Schwerkraftbrauer »

Brewing a simple cream ale today, but trying several new to me things.
5.5 gallon
Og 1.041
Fg 1.007
Ibu 22
Srm 3
90 min mash
90 min boil

Cascade Creamsicle.
5lbs 2 row pale
1lb 10oz 2017 Iowa sweet corn (yes corn, not maize)
1lb 2oz minute rice
.5oz cascade at 60 min
1oz cascade at 10 min
2oz cascade whirlpool 180°f for 15 min
S05 yeast ferment and 66°f
*cereal mash done on rice and corn*

Never used corn, but having a load in the freezer from last August gave me ideas.
Never done a 90 minute mash.
Never whirlpooled hops.

Trifecta of new things, so a lot of room for error, but isn't that what the hobby is about?
Should be drinkable (hopefully) for happy hour at the end of the month.
Cheers

Will be interested to taste this brew....especially the sweet corn portion.

It is not uncommon to see a flaked corn adjunct in a cream ale.

Was the corn just blanched before freezing? Was any salt, sugar, or butter added? Is it on the cob, if so, I am not sure I'd mash corn cobs....but it sounds like you are dealing with just the kernels.

The minute rice should be interesting too.

Good luck.
In the Fridge/On Tap: English Bitter, Schwarzbier, Cream Ale
In the keg: Wheat Beer, Russian Imperial Stout
In the bucket:
In the queue: Irish Red, American IPA

Just the kernels, cooked on the grill in the husks (not chard) and cut off the cob, each bag got 1T maybe 2T of sugar, not enough to do anything on a brewing scale.
It looked like clear creek water before all the hop additions, now resembles a NEIPA but I'm sure it will clear just fine.

Just got a taste of this tonight after force carb, 9 days grain to glass, very tasty. Certainly my quickest turn around. Everyone at my St. Paddys party loved it, easy drinker glad i hopped it how i did, will have to conserve it for LB tasting at the end of the month.
