Am I missing something?
Tried a few times doing this with a homemade type counter pressure system and the bottles don't stay carbonated more than a day or two.
Picnic tap on a few feet of tubing attached to the ball lock keg fittin, pressure released from the keg to eliminate excess foaming. Pressure turned to 2-3psi(just enough to get the beer out) fill chilled bottle and 'burp' with the rubber stopper on the bottle filling wand when it needs it. Fill till 1/4 to half inch from top and cap on foam, chill.
Judge me critique me, tell me i forgot a simple key peice.
Ive been at the point of buying a Last Straw bottle filler or Blichmann Beer Gun. Anyone recommend one or the other?

Make sure your beer is carbonated at the high end of what is recommended for the style.
You don't want it carbonated enough you waste a lot of beer, but error on the high side.

usually I fill until it touches the stopper, then the "wand" is removed leaves perfect head space, i dont think your missing anything, i typically dont cap on foam would be only difference, when you say stay carved for a day or 2, could it be an issue with caps/ cap per not having good seal? maybe do a couple let sit then stick underwater to see if you have some leak issues?

I think I'll try the over carbing method being ive never had issues with caps being loose.
I usually have my keezer set on the low end to help with foaming issues. But i also bought a new Regulator so that could be some of that as wel.

Sounds like pretty much what I’ve been doing except I don’t use a rubber stopper. Haven’t had any issues with losing carbonation, but my last couple brews were on the higher side of CO2 volumes.

That should work for you. Maybe beer under carbed to begin with? Make sure cap real tight.
I use a morebeer counter pressure filler. It is not as simple as a Beer Gun but it does produce the best product in the bottle IMO. It is how many breweries package entries for GABF. I have opened up bottles I filled two years ago and still great carbonation. I usually force carb my barrel aged beers now and then counterpressure fill bottles for long term storage.
