We just finished a sixer of Cascade, Warrior, East Kent Golding, Nugget, Chinook, and Nelson Sauvin. All the beers use the same malt bill and are hopped to 100 IBU. It was quite the learning experience, one I think we should do as a tech meeting. No better way to truly get the real flavors from each hop. There are 4 more, and we intend to finish the series (even the dreaded Simcoe).
The biggest suprise was 100 IBU of straight Cascade isn't bad! Not catty at all! Guess I'll have to lay off the Cascade boycott.
The Warrior had a heavier bitterness with a fruity finish. Something I may have to pair with Sterling sometime. Maybe a new IP Wheat.
East Kent Goldings are classic British hops. Mellow, spicy, even in excess. ESBs and Bitters would appreciate this one. I'm not sure you could easily overdo it.
Nugget is clean, not overly aromatic. I don't know what I would use it in, but it wouldn't get in the way of your malt profile.
Chinook had a clean, fruity (peach?) character. Another one that I thought was catty before I tried it on it's own.
Up last is Nelson Sauvin. This one was the only catty hop in the bunch. They describe it as like a white wine (so now I know why I don't drink wine).
It was a great experience. Something we all should try. I will do the next 4 ( Tomahawk, Simcoe, Amarillo, & Centennial) with our 2 favorites (EK Golding- mine & Warrior- the boy's) thrown in to make a 6er.
Their next series is the same beer with different yeasts. It should be another good learning experience. I can't wait.

Single hop beers are the best way to learn about a hop. Some other beers that I have had that are single hop beers are Bell's Two Hearted (Centennial), Avery Hog Heaven (CTZ or Columbus, Tomahawk Zues), Weyerbacher Simcoe Double IPA, Brian and Dave Simcoe IPA, Saint Arnold IPA (Cascade). I have made an all Amarillo Brown Ale before. It was much less catty than when in an IPA. I think the maltieness and specialty grains mellowed it out.

That Simcoe one is like the nectar of the gods. Or like drinking the nectar of the gods while floating on a cloud with angels. But not as good as Brian and Dave's. And the Centennial one was fan-fucking-tastic.
