Timmy is correct. Generally meat (beef or pork) will only absorb smoke up to a meat temperature of 140F, so the longer it takes to reach that temp, the more smoke it can absorb. So, starting with cold meat is better for "lo & slo" style Q-ing.

Steaks, however, cook quickly, so it's better to bring them up to room temperature before cooking; unless, of course, you like a frozen center with an overdone exterior!

One of the many differences between "grilling" and "BBQ-ing".

Cool on the Tactical Nuclear Penguin. I bought in, but had some conflicts. I thought I had missed it.

And, (too bad Larry isn't around to see this) I'm actually going to bring some of my own homebrew!

I won't make it tomorrow. We have too much to accomplish to head out of town Friday. I was able to get a portion of the Penguin at Big Brew. Wish I wasn't missing out on all that fine brisket. Have fun.

I missed out at big brew day. Do we only have 1 bottle left? I know michelle and I both put in $10.00 towards a bottle. She unfortunately will not be able to attend as she is out of town. I will be there.

There is only one bottle left. My plan is to serve to those who donated and then cap the bottle (with the provided cap) and hopefully have it for August for those who can't make it tonight. At 32%, I don't think bacteria will turn it in a month.

It is more like a liquor than beer. I don't recall any carbonation either.

No doubt some great beers and food last night.. Some of those brews must have been potent because I felt like part of brain must have been washed away from last night.

Thanks again Tony for hosting, and it was nice to see the stranger as well as many of the new faces of the club there last night.

Don’t forget to start brewing for BrewBQ and Iowa Fest of Beers..

I swear, the next meeting I am bringing a shot glass. Excellent beers, great food, I thought the decision on the brisket was correct though difficult, they were all very tasty. I never would have thought to put dill in cole slaw but I'm going to try it the next time. Tony, the jalapeños and bacon were addictive..Karl are you OK? Thanks Tony and John for the hospitality.

Now you see why I ALWAYS take Fridays off work following a meeting!!

JJ - I don't think the shot glass will help much. Too many beers to sample, regardless of sample size.
