Hi, being quite new to homebrewing (1st batch bottle conditioning, second in primary fermentor), I have a very basic question about fermentation time. My second batch is an oatmeal stout extract kit that I got from Midwest supplies. I used a dry yeast packet, rehydrated according to John Palmer's instructions in How to Brew, and was wondering how long to expect the airlock to be actively bubbling. It started within 12 hours, was bubbling 20-30 times/minute within 24 hours, and had slowed down to 1-2 times/minute after about 48-60 hours. I just wanted to make sure that this was the normal time for the airlock to be active. Temperature shouldn't be a problem (fermenting in our bedroom, warmest place in the house, averaging 68 degrees). Also, while I'm asking about fermentation, is 2 weeks fermenting, 2-4 weeks bottle conditioning pretty standard times, unless otherwise indicated in the instructions?
I appreciate all of the great feedback provided by members, and look forward to meeting you at one of the upcoming meetings.
Thanks,
Sam
fermentation time
The fermentation and bottling times in the instructions are general guides. 5-7 days is about average for the fermentation. Bigger beers (1.070+) can take longer. Once the activity stops give it a few more days just to be sure.
Bottle conditioning takes from 2-6 weeks. Try to get it a little warmer to help it along. After 2 weeks I'd try 1 and see how it's doing. If it's not carbed yet go another week and try again.
Welcome to the wonderful addiction of homebrewing. Hope to see you around sometime.
