My high gravity batch with 3522 is probably the most crazy ferment I've ever had. Blew the airlock after 2 days so I put a blow off tube on, seemed to settle down by Monday so I put the airlock back on and wrapped a blanket around it, blew that one off the next day! Blew the third one today so blow off tube is back on. Only 4.5 gal in a 6 gal carboy too

My fermentation was pretty normal. I ended up with about 5.5 gallons in each 7 gallon fermonster. Mostly done now.

Both of my beers have finished fermenting and are kegged. Sampled both and they're pretty tasty IMHO. Nothing especially creative though. I expect to see plenty of great beers from this!

Checked both fermenters today. Might not use 3711/French saison / Thirez by itself again, I like the complexity of the Dupont strain better and it cleared faster than the Thirez/Ardennes part. Maybe blend then all next time.
Had no problems with stuck fermentation: fermented them open and warm. All finished at / under 1.005, and I'll call it a success.

Just checked the gravity on my wort rally beer. 1.004! Granted, this was fermented with the Bootleg Biology Mad Fermentationist blend which is supposedly a blend of saison yeast, wild yeast, brett, and lacto.
I think I'm going to split what I have and dry hop half and put the other half on blueberries. Hopefully the blueberry batch behaves and will be ready in time for the judging!

Sounds nice. I have been drinking my NE IPAs with all Austrailian hops and need to save some for the event.

So are we supposed to bring growlers or kegs on Sunday?

I'm generating a post, that I will post this morning, that should spell out what is happening on Sunday.
You can bring growlers if you like....or kegs, but you will need to provide everything you need to pour, including ice. The club will provide sampling glasses for the attendees.
More soon....it will be posted as part of the Happy Hour announcement.
