Well, I ended up wrong about what yeast pack I had on hand. It was 04 instead of 05. Since I was a bit pressed for time I went ahead and rehydrated it and pitched it on Monday. I let it work at around 69F all week. I pulled a sample to test on my refractors today and I think I'm in the ballpark now. It's hard to get a good read because it's very cloudy. I didn't want to waste another 5-6 oz to use the hydrometer. The bit I tasted was much improved.

I went ahead and kegged it. I'm hoping I can get it carbed up in time for the tech meeting. Should be interesting.
