Hydrolysis of lipids in poorly stored malts.

Sad to say it claimed another 5 gallons of beer, but by process of elimination that is what I believe now for sure is what it was. Totally cleaned boil Kettle and everything metal in my system (including passivication of BK) and did another batch only this time using a glass Carboy and got the same flavor .

I did the same grain(rhar 2 row i bought back in March) thankfully I only had some of it left so it only accounted for 20% of the grain Bill versus the 85% of my last batch. The metal flavor is subtle but it is there.
I have since gotten more icing pails from the local bakery with a rubber o-ring around the lid. And seriously contemplating about investing in a Vittle Vault for grain storage. An oversight by me but the grain was left in the original bag in a Rubbermaid tote with no lid in my basement for probably a solid month possibly two until I had enough buckets to put it in. (Got busy, forgot About it, ect) Never experiencing oxidized grain before, I Didn't Know Better, hopefully this post aides in the education to the next person.

Noobish mistake on my part. But look at what I've learned.

Taste the raw malt....4-6 kernels, give it a chew as see if you detect any off flavors. That might confirm your hypothesis.

Luckily I don't have to do that because the malt is all gone however, the one thing that doesn't make sense is the Saison I brewed a month ago with the same malt had no metal flavor. And overall tastes great, both beers with the metal flavor we're both brewed with darker grains an ESB and a hoppy brown ale. No hops or specialty grains I used for one did I use in the other, the only similarity is the 2 row. Making me think that that is what the culprit was.
But what plagues me is the Saison it's the outlier unless Saison yeast got hot enough or crazy enough to burn up the off flavor and hide it with its own Saison character. Time will tell if I continue to have this luck, much to ponder

I still think it's highly unlikely that your grain spoiled just from sitting in an open bag unless it was stored in a warm, humid area. Lots of Brewers store it like that. The biggest risks to that are either bugs or mice.

I skiped the vittle vault and just bought the gamma lids for 5gal buckets. Same lid as the vittle vault. They also fit on any retired brew buckets you may have laying around.

I use the same containers you see at BIY. They usually have them at Sam's Club around November for about $20. I have five of them. Nice because I can just throw the entire original sack in. Have wheels so easily slide in and out from under my countertop in the brewery. Made for pet food storage.

Aldi's has something similar, they sell them seasonally. And I think they are available now.

Don't you worry about them not having a good seal?

No, they are air tight. Have a gasket for the lid. All food grade stuff too.

The ones I bought at Aldi's have the gasket in the lid too. Might be the same brand name, as these are for pet food too.
