Ssbrewtech includes dip tube with dam and ball valve for $200. You could leave the plug where it is at and add a weldless thermometer where you want it. You can also add their whirlpool fitting for $11.95 where their thermometer port is at, if you add a pump to your system in the future. Seems like a good option.

You can also get the Ss stuff through Joe at BIY and build yourself up some points at his shop.

Just scored a used Blichmann 10 gal kettle, with spigot, thermometer (tiltable), and sightglass. The thermometer is not installed at the lower level, but it was a decent price and I know the quality will be there. This kettle is what they produced prior to the G2 line.

Next I will be looking for a false bottom so I can mash; and I think I will go with the Avantco induction cook top....good value and other brewers give it good reviews.

Nice. You can move the spigot lower if you want. They even sell a kit for that. Drill a new hole where you want it and plug the old one. I did that on my keggle mashtun when I started doing more 5 gallon batches instead of 10 for a while.
