Saison
OK. Saison news. The fermentation is going really really slowly. I called Wyeast and talked to one of their lab thechs. He said this strain is notoriously crappy. It usually putters out around 8 or 9 plato. He said it will keep going, but very slowly. He said it could take a month before it finishes out. Right now its sitting at 11 plato, which is where it was yesterday. Thats not good. I'm going to do some things to rouse it up a little and try to be patient with it.
I just wanted you to know that it could be a while before we can drink it.

OK. The Saison is still going. But very very slowly. Its down to 9 plato now. Should be ready just in time for the Fourth of July

Well, the Saison is doing well. Its down to 4.5 degrees Plato, which is about 1.018. We are shooting for 2 degrees P, or around 1.007. I've been heating up the fermenter every day. Its up to 80 degrees, and still fermenting. So keep all your digits crossed.

Now is the time where I forget to mention that the guys at Millstream do this all the time for yeast starters. (shrink wrap the legs of the fermenter and stick a space heater under neath.)
