WYeast 3522 Belgian Ardennes

I had to comment on this yeast. What a champ! I purchased my first pack because I couldn't get the Schelde strain anywhere. On two belgian pale ales this yeast attenuated very well. It took on high gravity worts (1.070 and 1.075) with only a 2 liter starter down to 1.008 and the one working now had a lag of only about 2 hours and is still bubbling happily about ever 5 seconds after 7 days. I set the heater set at 75F, and get a nice crisp, spicy, dry finish with not over powering fruitiness.
