Tank 7 clone

I'm going to be playing with this recipe as soon as I'm able to. I'll take any thoughts and constructive criticism you care to give.

Per Steven Pauwels the grist is 70% pale malt, 20% corn and 10% wheat. I'm not sure how you get a 6 srm beer from that grist so I plan to use Weyermann Dark Wheat to get the color spot on.

I drink way too much of this beer not to try and give a clone a shot.

Yeah, that grain bill gives me a 3 SRM color in beersmith. Odd though, because I consider Tank 7 to be a pretty golden beer. How are you planning on accounting for the supposed wild element of the 7th tank?

Well, perhaps I'll give the fermenter a wicked sneer from time to time. Maybe open ferment?

Careful what you wish for. If I indeed do tea bag it, the results are going to show up on the internet.

By "tea bag" I of course mean dry hop with Amarillo per the recipe.

I have to admit being pretty frustrated with Beersmith recently. I'm sure it's user error.

SRM estimates and the like are pretty loose.I missed gravity target on this one by close to 10 points which just pisses me off. DME to the rescue!

I'm setting up a separate mash profile for beers over 1.060 to account for the lower extract. Maybe that'll fix it.
