How short is too short for starter time?

Post by hoboscratch »

So I may or may not brew tonight. I really want to churn out a wheat beer and am debating over whether or not to do it tonight. I have some white labs yeast that I purchased probably in May. I wonder if I whip up a starter tonight when I get home from work, if it would be ready to pitch after only 6-7 hours on the stir plate?

I regularly do starters just before setting up to brew, and they are active in that amount of time. May is not too long. You should be fine.
