New Seasonal at 3rd Base

Post by Lower Case T »

New Seasonal is finally on tap. She took a while. We did a Saison with a yeast strain from white labs that Jim was wanting to try. It has some Brett in it. It was WLP670. It started at 17.5 P and went all the way down to 1.8 P. It's dry, strong, and spicy. We didn't add any spices. It's all yeast.

Just put Brau-Weisse back on tap too.

So current tap list:

Bees Knees Honey Ale
Flying Aces Pale Ale
Black Cobra Oatmeal Stout (this batch we put the roasted malts in the sparge only, in case you wanna see what thats like)
F Bomb
Helios (thats the Saison)
Ayinger Brau-Weisse
Petrus Oud Bruin
Fullers London Porter
Ommegang Gnomegang
Stillwater Debutante

Golden Hawk Wheat will be back on tomorrow. Red Rocket will be out for a couple weeks.

Very nice! Travis you need to bottle some and see how it ages. Maybe do a vertical tasting in a couple of years.

I agree. Very good! It would be interesting to see if the brett develops more over time.
