Four months in the secondary on the moderate toast French oak cubes with White labs "Sour Mix" and Wyeast's "Roselaere Blend" The "sour" is nearly perfect but the oak character is lacking. I'll give it a month and bottle it then. I fermented in the primary with Safale 05 and pitched the sour bugs and oak cubes in the secondary. No noticable pellicle but there are bubbles on the surface. Part one I ptched Roselaere blend in the primary and had a pellicle after 1 month. That sat in the carboy for a year and developed some great oak character but was way sour. I'm going to test a small amount to see if blending is a good option. I would like some tasting opinions. Let me know if you would be interested in tasting various blends before I bottle.

I want to give the part two another month before I try blending so end of August or early September. I was thinking a Sunday afternoon would work best. I'll post again in a month with a more definite date.

Pottsie et al; Come for a taste tommorrow(7-29) afternoon. I think you'll agree Part two needs more time. I was going to grill and have a few in the backyard. Stay and have a few as well. I have Homebrew: a nice triple, Saison brett, very young barley wine; Store bought; Jolly Pumpkin La Roja, Saison brett, and various unremarkable IPA's. I also have a Belgian pale ale with a rootbeer complexity, a Pliney the Elder clone, and a saison(needs to be chilled). Invitation to any BeerNuts! Twoish?

Unfortunately, I'm not going to be around. Thanks for the offer, though!

Wish I could be there John, but I paddle in to the Boundary Waters in the morning. Just finished a nice Saison at the Boathouse Brewery in Ely, MN. I will be back in about week.

Stupid birthday parties snagged my whole weekend except for a RR clone I managed to squeeze in on Sunday morning. I hope you got some positive feedback?
