2013 Club barrel fill- Recipe suggestions

The club barrel is due for a fill and per the previous poll the majority vote is to collectively brew an Old Ale. The intent is to do a recipe either all grain or extract and have a total of 70-75 gallons to fill the club 60 gallon barrel.

The barrel will be occasionally tapped to provide a club beer for events and festivals that we attend as a group. The minimum expectation is to get back half of what you put in.

First order of business is to decide on a recipe. This needs to be a relatively quick reply item as we intend to do a fill date in April of this year. The beer does not need to be "done" per se, but should be fully attenuated by the time the fill date comes around.

So, that all being said please post your favorite Old Ale recipe or one you would like to see. Commercial examples "Third Coast Old Ale" for example can be submitted as long as you have a proven recipe that can be converted to extract or all-grain as the case may be.

Club officers will review submissions and make a decision based on your entries. Once a recipe has been determined I will ensure Joe at BIY is aware and has ingredients on hand shortly thereafter.

I don't have a recipe as I'm not too familar with the style, but my new brew house will be running for this and be happy to brew a batch for this. I can produce up to a 12 gallon finished product if need be.

Its nothing special but I'll throw one out for criticism. I made this one last march... and have samples if interested.

Just made an old ale 2 weeks ago. Not done yet. I plan to age this one with bourbon oak chips. Recipe follows. Have not tried it yet, obviously, but seems to have all of the flavor elements including home made caramel syrup.

Old Farmer John 5.5gal in fermenter, 7gal pre-boil:
10# Maris Otter
.75# English Crystal 60
.25# Crystal 120
.25# Special B
3.3# Gold malt extract
.5# light DME
1# Dark brown sugar made into caramel syrup(see below)
1oz Northdown hops 60min
1oz EKG 30min
WLP005 British Ale Yeast
Single infusion 154

I used brewing water that was 150ppm alkalinity with Calcium level at 77, sulfate 74 and chloride 68.

I used 1#dark brown sugar in 1pint of water and boiled it for 30 min to get a thicker, burnt sugar syrup that I added to the boil with 10 min left.

Again, its not done fermenting yet so don't know the flavor, but it smells awesome!
