I have this one and it works well. Heat and cool settings, and it's pretty adjustable to do what you want it to. The only catch is that it is in Celsius, but Google will convert to F pretty easily. This is the same unit used in the BYO article a couple years ago. Pretty good deal with free shipping for orders over $25.

These actually use negative type resistors as a 'temperature sensors' as opposed to the traditional bi-metallic [J, K, T,etc.] types.
I'm not too sure what would happen if you ever needed to replace the temperature sensor as it could be difficult to find a sensor with the same response to temperature.
Also, mine was a little off. Just make sure to check the temperature with these. There is a temp offset built into it that you can change.

Yeah, I knew they used thermistors, like all the cheap kitchen probes. Doing some googling, people appear to like these http://www.ebay.com/itm/111057221128 as probes.
Apparently, the original probe is one of these http://www.digikey.com/product-detail/en/KTY81%2F110,112 in a rubber jacket.
