making soda

I am thinking of making a blue berry lime soda for the festival.
Recipe (making this up as I go)
Syrup
24 cups of blueberries
12 cups h2o
42 oz sugar
18 tsp of lime juice
Mix at a ratio of 2 oz syrup to 8 oz of water.
Keg and carbonate.
I can calculate approximate pH drop from CO2, but what is appropriate pH for soda? Does it matter?

I don't know "appropriate" pH. Last year I made a ginger ale, and at first it tasted too sweet and kind of bland, so I added some lime juice. (I think, maybe it was lemon.) So basically, I'd let taste be your guide.

One thing I've learned about sodas is that they can use a lot more carbonation than beer. IIRC I carb at around 25-30 psi. W/ soda, the head dies down almost instantaneously so so worries about line balancing and all that fun stuff.

Sounds like a recipe w/ a lot of potential. I kind of like building it up. You can always add more sugar, but you can't take it out. Same goes for lime juice. Pretty sure you can't overdo the blueberries though.

Soda pH can vary a lot, but it's generally in the 2.5-3.5 range.  Coke is generally considered the most acidic, at 2.5.  Mountain Dew is around 3.3.

Interestingly (to me, at least) Mountain Dew's acidity is due to the high amount of citric acid, which keeps it from growing mold.  It also prevents you from "I found a mouse in my can" type lawsuits: http://www.thesmokinggun.com/documents/mouse-in-mountain-dew-563891 .
