I know it's not exactly BBQ but I've seen some random FB posts from club members about Sous Vide cooking. I'm looking at an Anova as a place to start. http://anovaculinary.com/

I use a crock pot and a temp controller. Works great to get started and the controller can be repurposed.

I got one a couple of months ago and Tony just got one too. I really like it: it's simple to use and works very well. I've used it in a stock pot and in one of my 5 gallon coolers. I haven't done any really long cooks with it yet, but it should work great for those. I've done a few steaks and some chicken and turkey breasts. I also use to quickly thaw out and warm stuff from the freezer too.
I had one of those Sansaire models reserved after hearing about their Kickstarter campaign but they kept having delay after delay so I was losing patience. Then I saw some nice reviews of the Anova and decided to cancel the Sansaire.

I used the crock pot method too. My setup didn't hold the temperature as steady as I wanted since there was no water circulation. Another big negative for me was that I was stuck with the volume of the crockpot. I was OK for playing around some but I was not real happy with the results.

I got mine right after Randy and all I can say is - Love it, Love it, Love it!!! My new favorite way to cook. The best part about it is that it's almost impossible to overcook anything. Just set the final temp and go!
Check their website and/or Amazon, as they got slammed over Christmas with orders and were backlogged for about a month.
Have cooked several steaks and done turkey tenderloins in a wet marinade. All came out great. Will likely do another steak tomorrow so I can finally finish it up on the grill, as with the crappy weather, I'd been finishing them in a pan on the stove. You need to do a sear to get the Maillard reaction. Also on my "short list" of things to try is salmon. Here are some pics, and as you can see, right out of the bath, the meat is rather gray (fully cooked, but no "crust").

Even at the final retail price of $169, they are still a great buy. I like a lot of the upgrades. The bluetooth is a bit over the top for me, but many of the other improvements look very worthwhile.
I love my original and use it several times a month. Just did my first salmon in it - PERFECT! I didn't even pan sear it, as I'm not a huge skin fan, so the dogs got a tasty treat when I was done with supper. I did the sausages in it before bringing them to Big Brew Day.

Do you happen to know the difference between the original and new models? I should basically add that my plan is ti use it for slowly pre-heating strike water (cheeper than propane), in an insulated vessel. I had been planning to get a heat stick + outlet timer and just calculate how long to run it based on wattage, but for a few bucks more, this seems worth it -- just run it overnight, or turn it on when I get up for an afternoon brew.
