Underground food collective up in Madison has a sausage class and a whole hog breakdown class available. I'd love to go up to Mad-town for either of these later this year. I'm pretty sure they just schedule a few at a time. Anyone interested? The May 3rd date is out of course as that's Big Brew Day.
