Leviathan IIPA - Thoughts?

Post by jjpeanasky »

Hey guys, thinking of brewing my first ever IIPA soon. Partly because I've never made one, partly because now that I can keg I don't worry about hop aroma going kaputs on me, and partly because I have hops to use up. Just wanting to get a second opinion on the hop combination to make sure I'm not crazy. Here it is:

Batch size: 3 gallons
OG: 1.080
FG: 1.016
ABV: 8.3%
IBU: 100

Fermentables:
8lb 12oz Halcyon (English pale malt)
13oz Vienna

Hops:
41g Apollo (16%) @ 30min
30g Nugget (13%) @ 10min
15g (0.53oz) Pacific Jade @ Flameout
15g Ariana @ Flameout
15g Jarrylo @ Flameout
15g Pacific Jade @ Keg hop
15g Ariana @ Keg hop
15g Jarrylo @ Keg hop

Yeast:
San Diego Super, big starter

Mash will be at 150F for 60 minutes.

what's the target OG and estimated FG, so I don't have to calculate that?
(I personally mash low on imperial anythings -- 145F)

Looks solid. What is Ariana like. Never tried it. Like the Aplollo. Will make it dank.

Thanks. I haven't used Ariana yet at all, so it should be interesting. Commercial descriptions include "grapefruit, gooseberry, citrus, and vanilla" so who the fuck knows.

Just wanted to throw an update on here. I kegged the beer a bit over a week ago, and it's great, although I think it's borderline NEIPA territory. I'll have it at the LionBridge Happy Hour tomorrow (Sept. 24th). It's got a good bit of fruitiness (think citrus rind) up front with some spice on the back end.
