OK, we need to clone this beer. We are looking at a Witbeir. The malt bill has more pale malt than wheat. There is coriander in the fermenter. Looking at a wit yeast. All of that is pretty evident. What about hops? The web site says it is dry hopped. And it is definitely more hoppy than any wit I have ever had before. I am going to try to contact the brewer, to see if I can get some hints. Any ideas from you guys would be appreciated, and considered.

What I try to do is sit down with the beer with a hop profile chart, malt chart, and yeast chart, and build from there.

Going to the store and buying it means a trip to wisconsin. I will buy it each and every time I go there. But in between, I want to have it on tap. You've never tried to make a beer to replicate some commercial beer you like?

Started with a clone recipe (don't have it a work with me, so I can't give you the name, will post later), then tweaked the grain bill and other items in the recipe making a couple of additions. I always sit with the BJCP guidelines and tweak almost all recipes I work with. Just gives them my own little flare, that way I am not passing someone elses beer of as my own.

Do you use promash 'T', I can email the recipe to you if you have use promash or if not I can print to text document then email that to you?

Sheeeoooot! I will clone anything I like. If Travis makes a sweet beer at 3B, I will clone it but usually try to improve it for what I like. Many beers are awesome but I usually feel like I would like something slightly different. If I like it, I will brew it.

Of course, it helps when the brew day takes me 5 to 6 hours and it takes place in my cool basement. I usually get fatty when I am in Wisconsin or when my buddy from Madison visits which is frequently. Like brownbeard, I still like to brew it and put it on tap.

The guys up at Furthermore know us, so why don't you send them an email and ask them for the recipe or at least some hints or guidance? Remind them that we can't buy the beer here and they may be more willing to help. A lot of brewers will just give a homebrewer the recipe or at least give enough hints to allow us to replicate the recipe. All they can do is say no. Wouldn't it be cool to have a Fatty with a fatty?

I emailed a couple of days ago, and have not received a response yet. But all I have is the general email address for the brewery.

Chris should get the email. If you mentioned he may remember us from the Barn Party last year that will probably help. If we don't hear back for a while, we can ask him at the next barn party.

Check out a link to the 2008 release party for Fatty. That would have been fun.
