Brown Ale

My first brew in temp controlled conical and a 14 gal. Boil kettle.
1st The boil kettle was to help prevent boil overs with 7.5gal original volume. End of boil gravity 1.110. Nice big boil, preboil gravity was 1.053. I'll try partial cover next batch.
2nd Temperature controlled conical. NICE! Just kegged after cold crash; not as dry as I planned but clean no unwanted phenols.
The ale is like an English brown, north or south whichever is the sweeter . North? Newcastle?

Good to hear from you John. Pre-boil 1.053 and end of boil 1.110 is pretty crazy. You do a really long boil or just super vigorous? I have read some articles lately that say the boil just needs to be bubbling to be effective. Maybe turn down the heat a bit.

I had always read that a "vigorous " boil was needed to rid of Dms. I bought the 14 gal kettle to boil hard but reduce the risk of boil over. Seems to have worked but I think I must have overdone. I didn't notice the post boil volume was low, quite low. Always learning.

Most modern malts, even Pills, are much improved in that regard. DMS is not as much an issue anymore. Yeah it can happen but you see it more with adjuncts I think. My system doesn't do full boils, and I'm hearing more and more about short boils.

I stopped doing 90 minute boils for all pilsner malt even. Saw pros doing it. No issues I have noticed.
