Hello, this is my first post. I've been brewing for a while and have had the pleasure of trying some of the CR beer nuts brews at 2008/2009 benz beerfests. Really liked the coffee stout in 08, not sure what I even tried this year I think I was a little drunk by the time I got to the tent.

I'm looking for a good recipe for Dunkelweizen and I really liked the Cedar Brew/3rd Base's earlier this year so much I thought I would ask around here. Can anyone point me in the right direction? I usually do "ghetto" partial mashes in my brew pot/extract but I would be able to convert an all grain recipe.

Congrats on the first post, I like/brew ghetto brewing.. but never brewed a Dunk. I was at both 08, and 09 benz serving… so perhaps we will meet again. I’m sure by mid afternoon Wednesday you will have a half dozen “experts” throwing you advice.

If you feel inclined, stop by a club meeting, I’m sure we would all love to taste the Dunkel or whatever else your brewing.

I'm not sure how it would convert to a partial mash.

Brewing classic styles is also an excellent source for tried an true recipes. Most are given in both partial mash and all grain.

Thanks guys! Was really hoping to get the recipe for that Cedar Brew Dunkel since I liked it so much, but Weizenbock is a style I have never tried before, I'm surprised because it sounds like it's my type of beer.

I had to look it up on BA - A more powerful Dunkel Weizen (of "bock strength"),.. wow, how have I never heard of this style before?

I like Dunkelweizen, I love stronger ales (doubles IPA, russian imperials, doppelbock, etc)

I will definitely have to stop by a meeting some time.

How did the Weizenbock taste? Was it pretty malty / rich?

I think this is what I did last time:  (Cedar Brew's dunkel)

40 %  domestic 2 row
40 %  malted wheat                                                 Est. SRM   18
10 %  Munich dark  (about 30 SRM)                          Est IBU       18
4.5 % Cara Munich 80 L                                           My OG was 13.6 P
4 % Pale Chocolate   (about 200 SRM)                      FG around  3 P
4 % Cara Munich 40 L


18 IBU of Saaz for 60 min of a 60 minute boil.
Pitch Wyeast 3068 yeast.


I mashed at 153 deg for about 45 minutes.  And I fermented this one pretty cold.  around 60 degrees F for the most part.  Then let it rise up as high as it would go.  


I think I might have been following Jamil's recipe and plan of attack from his Dunkel show.


I really liked the pale chocolate malt, and of course the key is to use the right yeast.

I think I might have been following Jamil's recipe and plan of attack from his Dunkel show.

I listened to that episode a few months ago, I guess I already had the recipe! No seriously though, I thought your recipe was great, If I make it I'll try and crank it up to 11.

I didn't get a chance to try the Weizenbock at this years beerfest, and didn't get there in time for the (Mountain Brew?) Mountain dew beer either.

I'll have to give the Jamil dunkel episode another listen I remember them giving some good tips on it.
