I plan on brewing a 2.5 gallon batch of Jamil's "Evil Twin" kit from Northern Brewer this Saturday. This one uses a more complicated hop schedule including dry hopping so it should be interesting.
As before, if anyone wants to supervise I could certainly use input. Just let me know and I can give you instructions on how to get here. It's really easy to find and no gravel except for the driveway.
I don't have any home brew ready yet, but have two hearted, torpedo, tripel kameleit, and few other odds and ends on hand for refreshment.

I went ahead an bottled this today. It was in the fermenter for 2 weeks, but the gravity only got down to 1.018. Hopefully that won't cause bottle bombs. The kit instructions don't give an estimated FG, so I was a little concerned.
However, if the Wyeast 1056 attenuates to about 75%, then it should have come in around 1.017 (OG was 1.067). So I think I should be OK, right? At what FG should I be worried about how much priming sugar I use?

I was about to say 1.067 OG would be high for one package of yeast but then I remembered you are doing 2.5 gallons so you should be in good shape.
